  • Avacado oil 2 tbsp
  • Maple syrup 2 tbsp
  • Rice vinegar 2 tbsp
  • Garlic 1 clove diced
  • Lime juice – 1 lime
  • Paprika – 2tsp
  • Sea salt 1 tsp
  • Cumin powder 2 tsp

  • Diabetar rice 320g (drained and rinsed)
  • Peppers orange 1/2 diced
  • Sweetcorn 30g
  • Red chillies ½ diced
  • Pinto beans 30g
  • Baby plum tomatoes 6 (1/4 rd)
  • Avacado 1 small cubed
  • Red onion 1/2 diced
  • Corriander 6 stalks – chopped
